I took the tonkatsu dish theme and turned it into this Cobb style salad. It’s got all the healthy components, plus the crunchy pork cutlet, sweetness for the mandarin oranges and the distinct flavor of the Katsu sauce. I think this is a winner!

Can this recipe be made ahead?
Yes! You can make all the components of the salad about 4 days ahead.
Either package them separately or, place the cabbage on a plate, bowl or platter, lay parchment paper over the top, then align your rows of vegetables, proteins and fats. Cover well and keep dressing separate until serving. When ready to eat, pull the parchment paper and dress the salad. Top with nuts, if desired.
