Strawberry Arugula Salad

Simple and elegant. This salad is a winner and my personal, ultimate favorite!

A simple, but elegant salad just perfect for two. The pairings of sweet strawberries with bitter and spicy arugula and creamy goat cheese drizzled with pungent and acidic balsamic vinegarette is a match made in heaven.

Special equipment needed for this recipe?

No. Just a couple of bowls and either a jar of whisk for the dressing.

Can this recipe be made in advance?

Yes! The dressing can be made up to 2 weeks in advance and refrigerated. The salad, when assembled, will last about 3 days in the fridge, but don’t dress it until ready to serve.

Can this recipe be frozen?

No. See above for make ahead instructions.

What to serve with Salad with?

A crisp and clean Sauvignon Blanc to start, then, any savory dish that will be served as a main dish. For the Lovers, I paired this with a Seared Duck Breast served with Polenta and Snap Peas. Delicious!
