Sous Vide Tempered Chocolate

A new way to temper and HOLD chocolate until you are ready to use it!

I ran into a problem. I wanted to temper chocolate, but do not have a microwave. I know that seems a little too far fetched given that we live in 2025, but, alas, I was left to either do the chore on the stovetop with all the variables that go with that or . . . . enter, the Sous Vide! I LOVE my sous vide and to find yet another use for it just gave me the giggles. Gotta try it! So I did and now, you can too!

Special equipment needed for this recipe?

A Sous Vide Stick and a container for your water bath. You will also need either ziplock or food fresh bags that seal.

Can this recipe be made ahead?

Yes! That’s the beauty of the Sous Vide. Not ready to use your chocolate yet? Keep the sous vide running for hours or days until you are!

Also, once the chocolate is tempered and piped into the shapes you wish, it will keep for months in an airtight container on the countertop.

Can this recipe be frozen?
