We are using grams vs ounces for this recipe, so you are sure to get a consistent result when making these. Therefore, you will need a food scale that measures in both pounds/ounces and grams.
The main ingredient here is the miso paste, so make sure you get a good brand. White miso paste, or mushroom miso paste is a bit milder than the deep brown or red misos, so for your first crack at this recipe, I suggest using them. That said, if you have miso paste in your fridge already just use it here. White, red, brown or a combo of all, it will work fine.
Tips and Tricks for this recipe:
Make sure your butter is room temperature before staring this recipe.
Remember to lightly toast your sesame seeds in the oven while you are working with the dough. Just 10 minutes are all they need to start the toasting process and it does help deepen the flavor of the cooking by doing this.
The dough should rest after working for at least 3 hours. This gives the gluten time to relax and the miso to absorb into the flour, mellowing out the flavor a bit.
Make sure to keep the dough chilled. It’s a very soft dough and tends to get super sticky if it is not chilled when working with it. Also, by chilling the cookies before popping them in the oven, they will spread less when baking.
You will need some type of tool to make an indentation in the center of the dough half way through the baking process. I use the back end of a Mellon baller, but you can also use the back of a teaspoon or tablespoon. . .
Nutella in the center of these cookies is not necessary. You can fill them with whatever. you like . . . jam or even tahini sweetened with honey. Be creative!
Can this recipe be made ahead?
Yes, the dough can be made about a day in advance and stored in the fridge. You can store the dough without rolling it out, or after the cookies are formed. Just wait to dip them in the sesame seeds until ready to bake.
Can this recipe be frozen?
Yes, bake the cookies fully, let cool completely, then freeze for a few months. You can freeze with or without the Nutella centers.
