Can this recipe be made ahead?
Yes! Make the potatoes a day or two ahead then refrigerate. Add the cornflakes drizzled with butter just before baking. Baked casserole can be refrigerated for a few days and warmed up, but the crunch of the cornflake may not be as crisp.
Can this recipe be frozen?
Yes! Make sure the casserole dish it is in is freezer friendly. Freeze before baking, then, when ready to bake, cover with cornflakes, drizzle with butter and bake an additional 10 minutes from frozen.
