Dandelion and Chicory Salad

Oh how lovely bitter greens are! Great for a Spring Detox! This screams SPRING!

I love bitter green salads. Chicory is one of my favorites, but Dandelion in the cusp of winter to spring is really fabulous. Add a few olives and a citrus dressing and this salad is as good as it gets.

Special equipment for this recipe?

If you wish, as salad bowl and salad servers is a nice touch.

Also, a jar to shake up the dressing makes the execution much easier. You could also just use a bowl and whisk, or a mini food processor.

Can I make this recipe ahead?

Yes, you can wash, dry and combine the dandelion and chicory and store them in an air tight bag for at least 1 day. You can make the salad dressing up to one week in advance.

When ready to serve, just add the olives, bee pollen, dress and you are set.

No

What to serve with this recipe?

I paired this salad with Lion’s Mane Mushroom Skewers. But this salad is a great start to Italian inspired dishes, such as Stuffed Calamari.
